Mary's Granola is so delicious we thought, what if we made a version that was just not quite as tasty? Well, we did it!

Actually the plan is to make a granola out of ingredients we can produce locally. We're especially conscious that some parts of locally processed beef is wasted. It's a shame to waste any part of the animal, but especially when it's a super high quality food ingredient like tallow and collagen. So we made this granola with only oats, honey, beef tallow, beef gelatin. Unlike normal cereals that are packed with seed oils and refined sugars, we're baking hearty oats in highly stable, nutrient-dense beef tallow from the ranch, sweetening it naturally with our raw honey, and using beef gelatin to create giant, protein-rich clusters with an unbeatable crunch. It’s ancestral rocket fuel. We have not YET successfully grown oats, but we're working on it. 

The Fat: Grass-Fed Beef Tallow Almost all modern granola is baked in highly processed industrial seed oils like canola, soybean, or sunflower oil, which easily oxidize under high heat. Instead, we bake our oats in pure beef tallow. Tallow is exceedingly stable at high temperatures, meaning it doesn't break down into inflammatory compounds during baking. Beyond health, it offers a richness, a savory depth of flavor, and a profoundly satisfying, golden crunch that vegetable oils simply cannot replicate.

The Binder: Beef Gelatin Instead of relying on sugar syrups to stick our granola together, we utilize beef gelatin. This powerhouse ingredient serves two purposes: First, it is an excellent source of collagen protein, which is essential for supporting healthy joints, skin, and gut integrity. Second, gelatin is the secret weapon for texture, acting as a strong, non-brittle binder that creates massive, satisfying clusters that don't crumble into dust at the bottom of the bag.

The Sweetener: Raw Ranch Honey  Because it is raw and unprocessed, it retains its natural enzymes, antioxidants, and the complex flavor profile of our local forage.
